ishinoko Festival Cook Book 2024

『ishinoko』は山々に囲まれた石川県・滝ヶ原で創出してきた、コミュニティ、自然との調和、創造的な表現を、音楽、食、アートの3つの分野を通じてお祝いする祭典となっている。滝ヶ原エリアの地域住民と国内外から集まった若きクリエイターやアーティストが一体となり、人口流出により衰退した滝ヶ原の伝統的な祭りを再定義する実験的な試みでもあります。 ------------------ その料理部門として、昨年度のフェスティバルに参加した全シェフのレシピ集の公式クックブックの取扱いを始めました。Bong SadhuメンバーのMikito Hyakunoもこのフェスティバルにイベント撮影として参加しています。 この本の収益は、毎年ishinokoフェスティバルのishinoko kitchenの企画・制作に役立てられます。ishinokoキッチンは、そのささやかな始まりから、美食と文化の交流の場となってきた。毎年招待されるシェフたちは、生産者訪問や採集ツアーを通して、この地域ならではの旬の食材について学び、地元の食材とシェフ自身の経験を織り交ぜて作られた料理を食べることで、日本の里山文化への理解を深めています。ishinoko kitchenは、一見異なる食文化や食習慣を共有することで、ダイナミックでありながら壊れやすい生態系の中で、人間であることの意味を相互理解する糧になると信じています。 The official 2024 ishinoko festival cook book is available. Our co-founder of Bong Sadhu member : Mikito Hyakuno is also participated as one of a photographer. The proceeds of each book goes toward the planning and creation of ishinoko kitchen at ishinoko festival each year. From its humble beginnings, ishinoko kitchen has been a platform for gastronomic and cultural cross-pollination. Chefs invited each year learn about the unique, seasonal ingredients of this area through producer visits and foraging excursions, and diners gain a deeper understanding of Japanese satoyama culture by consuming the dishes created from the mixing of local ingredients and chefs' own experiences. ishinoko kitchen believes that by sharing our seemingly different food cultures and practices, we feed a mutual understanding of what it means to be human within our dynamic yet fragile ecosystem. 3 days / 13 chefs 110 pages of stories, recipes, and images / A5size
